Baked Spicy Bajra Papdi & Peanut Chaat by Chef Varun Mishra
Culinary Magic with Millets
Ingredients for Bajra Papdi
- 2 cups bajra flour
- 1 tsp ajwain seeds
- 1 tsp. red chilli powder
- Salt to taste
- 4 tbsp oil
- Water to bind the flour
Method
- Preheat the oven at 150 deg C.
- Take bajra flour in a big mixing bowl. Add ajwain seeds, red chilli powder, and salt. Mix well.
- Add oil and rub it in the flour.
- Gradually add warm water and knead the dough very well.Divide the dough into eight balls. Using two plastic sheets roll out each ball into a disc.
- Using a jar lid or a cookie cutter cut out rounds.
- Prick these with a fork.
- Make balls of the left over dough from the rounds and roll and cut like done before.
- Bake in a preheated oven for 12 – 15 minutes or till golden and crisp. Do check in between and rotate the tray once.
Ingredients for Chaat
- 1 cup Boiled Peanuts (soaked in water for 1 hour)
- Water
- Salt to taste
- Small piece of finely chopped Cucumber.
- 10 gm - Finely chopped Onion
- Finely chopped Green Chillies (as per taste)
- Some finely chopped Bell Peppers
- 1 medium sized finely chopped Tomato
- 15 gm - Finely chopped Cabbage
- 15 gm - Purple Cabbage.(optional)
- 30 gm - Pomegranate Seeds
- 5gm - Chaat Masala
- 2 tsp - Red Chilli Powder (as per taste)
- 2 tsp - Dhaniya Pudina Chutney
- 2 tbp - Imli Chutney
- 1 Lemon Juice
- Nylon Sev to sprinkle (optional)
Method & assembling of Chaat
- In a pressure cooker add 1 cup Peanuts (soaked in water for 1 hour).
- Add some water and salt to taste and pressure cook up to 2 whistles on medium flame.
- Once cooled, take it in a mixing bowl.
- Add a small piece of finely chopped Cucumber.
- Add 1 spoon finely chopped Onion.
- Add finely chopped Green Chillies (as per taste).
- Add some finely chopped Bell Peppers.
- Add 1 medium sized finely chopped Tomato.
- Add some finely chopped White Cabbage.
- Add some finely chopped Purple Cabbage (Add vegetables as per your choice).
- Add some Pomegranate Seeds.
- Add some finely chopped Coriander.
- Add few roughly chopped Mint Leaves.
- Add 1 tsp Chaat Masala.
- Add Red Chilli Powder (as per taste).
- Add 2 spoon Dhaniya Pudina Chutney.
- Add 2 spoon Imli Chutney.
- Add 1 Lemon Juice.
- Add Salt as per taste & mix everything well.
- Add Sev (optional) & again mix it.
Take it on a serving plate and top bajra papdi’s with some boiled peanut chaat, sev and mint leave. So here’s your Healthy, Tasty bajra papdi & boiled peanut chaat ready!
